Ingredients

  • 2 Tbs Basil Olive Oil
  • 1 large iceberg lettuce or 1/2 lb (250gram) greens of choice, shredded
  • 1 small garlic clove minced
  • 1 celery stock, chopped
  • 6 green (spring) onions, chopped
  • 3 Tbs fresh parsley, coarsely chopped
  • 7 cups chicken stock
  • 1 tsp salt
  • 1/3 tsp ground black pepper
  • 3/4 cup sour cream
  • 1 Tbs fresh basil, chopped

Directions

Step 1

In a large pot, heat Basil Oil to warm. Reserve 1/4 of lettuce and sauté the remainder for 3 minutes. 

Step 2

Add the garlic, celery, 2/3 of green onion and parsley and cook for another 3 minutes.

Step 3

Add the stock, salt, and pepper and simmer for 10 minutes. 

Step 4

Transfer to a large work bowl of a food processor or use an emersion blender stick directly in same pot and process until smooth. Stir in the remaining lettuce and green onion and chill. To serve ladle into individual bowls, Swirl potions of sour cream into each bowl. Garnish with chopped parsley.
