Sides

Ingredients

  • 1 lb fresh asparagus, trimmed
  • 2 tbsp Branch and Vines Lemon Balsamic
  • 2 tbsp Branch and Vines Lemon Olive Oil (or extra virgin olive oil)
  • 2 garlic cloves, minced
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tsp lemon zest (optional, for garnish)

Directions

Step 1

Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Prepare the asparagus: Wash, trim ¼-1/2 inch of bottom. Arrange them in a single layer on the prepared baking sheet.

Tip: If stems seem woody, use a peeler and peel the exterior up to the tender portion. The beautiful interior of the asparagus is there to enjoy.

Step 3

Mix the dressing: In a small bowl, whisk together the Branch and Vines Lemon Balsamic, Lemon Olive Oil, minced garlic, salt, and pepper.

Step 4

Coat the asparagus: Drizzle the balsamic mixture evenly over the asparagus. Toss gently to ensure all spears are coated.

Step 5

Roast: Roast the asparagus in the preheated oven for 12-15 minutes, or until they are tender and slightly caramelized. Thicker asparagus may take a bit longer.

Step 6

Finish with flair: If desired, sprinkle grated Parmesan cheese over the asparagus in the final 2 minutes of roasting for a savory touch. Garnish with lemon zest for extra brightness.

Step 7

Serve: Transfer the asparagus to a serving platter and enjoy as a flavorful side dish with your favorite main course.

This recipe is perfect alongside roasted chicken, grilled fish, or a hearty pasta dish. The Branch and Vines Lemon Balsamic adds a vibrant citrusy tang with a hint of sweetness, making it a standout on any table!
