Ingredients

  • 2 eggs - separated
  • 2 cups of milk - use buttermilk if you can
  • 1/3 cup Vanilla extra-virgin olive oil
  • 1 tbsp amaretto liqueur
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp sugar
  • Optional: Spiced Peach Bourbon Jam

Directions

Step 1

Separate the eggs into yolks and whites. In one bowl, mix the egg yolks with milk, vanilla extra-virgin olive oil, and amaretto liqueur. In another bowl, whisk together the flour, cornstarch, baking powder, and salt.

Step 2

In a separate clean bowl, whip the egg whites with sugar until stiff peaks form. Gently stir the yolk mixture into the dry ingredients until just mixed (the batter should be a bit lumpy). Carefully fold the whipped egg whites into the batter, being mindful not to deflate the mixture.

Step 3

Pour the prepared batter into a preheated waffle maker and cook for 3-4 minutes, or until the waffles are golden and crisp. While the waffles are cooking, warm up with maple syrup or Spiced Peach Bourbon Jam. Serve the hot waffles topped with the warmed sauce.
